The No-Bake Strawberry Cheesecake My Son Picked for Me
A no-bake strawberry cheesecake made with fresh strawberry jam from a day at the farm with my son — easy, quick, and the perfect way to use up summer berries.

One morning early last summer, my son and I drove out to a farm just outside Chicago. It was one of those rare days that was just for the two of us — no errands, no schedules, just sunshine and rows of strawberry plants.
We started with one basket. Then we picked so fast and had so much fun that we went back for two more. By the time we got home we had three full baskets of strawberries sitting on the counter and my son had one request: "Mom, can we make strawberry jam?"
That request came straight from my mom, his grandma. Every summer my kids usually spend time with her in Bulgaria, helping her in the garden and learning the little kitchen rituals she grew up with. This summer he did not get to go, so he wanted to do something that felt like her — standing over a pot of strawberries, stirring until they turned into jam, just the way she does.
So we made jam. And then we made a few more desserts because, when you have that many berries, you find ways to use them. Waffles, crepes, French toast — everything got topped with strawberries.
Why this cheesecake was the answer
By the end of the day I was tired of stirring jam and washing strawberry-stained bowls. I wanted something easy. Something I did not have to bake. That is when I pulled out my no-bake cheesecake recipe.
It is the kind of dessert that looks like you tried harder than you did. Cream cheese, a little sugar, whipped cream, and a graham cracker-style crust. No oven. No water bath. No stress.
The strawberry jam on top
We had not jarred every bit of jam. A little was still left in the pot — thick, sweet, still warm. I spooned it over the chilled cheesecake and let it drip down the sides. That is the version in the photo: a no-bake cheesecake covered in real strawberry jam, made from berries my son picked himself.
You can use store-bought strawberry jam and it will still be delicious. But if you ever find yourself with too many summer strawberries, this is the dessert to make.
Why my family asks for it on repeat
It is light, creamy, and not too sweet. The jam gives it a bright, fruity top layer and the cheesecake base is rich enough to feel like a real treat. My kids love it. My husband goes back for a second slice. And I love that I can make it the night before and pull it out when everyone is ready for dessert.
Make it yourself
