The Cake My Kids Almost Didn't Get to Eat

My daughter asked for a lemon blueberry cake. What she got was something completely my own — and my kids never forgave me for giving it all away.

The Cake My Kids Almost Didn't Get to Eat

It started with my daughter.

She sent me a recipe — lemon blueberry cake — and said, "Mom, can you make this?" She had a craving, and honestly, I get it. Lemon and blueberry together in the spring? Yes please.

So I looked at the recipe. It called for cream cheese in the batter. I read it, thought about it... and decided to do something different. That's just how my brain works in the kitchen. A recipe is a starting point, not a destination.

I swapped the cream cheese out of the batter entirely. Instead, I made a lemon cream cheese frosting with lemon curd mixed right in — and then warmed extra lemon curd and drizzled it over the top to create that beautiful leopard print effect you see in the photos. I made a few other changes along the way, and by the time I was done, it had become something completely my own.

My daughter got her lemon blueberry cake. Just not the one she originally sent me.

The cake turned out so well that I brought some to work for my coworkers. (Full transparency: they've been asking me to bring my baking in for a while. I don't usually. But this time I said yes.) They were delighted — the kind of reaction that makes all those hours in the kitchen feel worth it.

Here's the part that made me laugh though

When I got home, my kids went looking for the rest of the cake. It was gone. I had given it all away.

They were upset with me. Like, genuinely upset. Because this cake — the one that started as their sister's craving, that I transformed into my own recipe — was so good that they wanted every last slice, and mom had given it to her coworkers instead.

That's how I knew this one was a keeper.
