Easy Smash Meat Tortillas
Crispy, cheesy, and ready in about 20 minutes — a weeknight dinner my kids ask for again and again.

Instead of stuffing the tortillas, I smash a thin layer of seasoned meat directly onto the tortilla, cook it meat-side down until perfectly browned, flip it over, melt the cheese, and finish it with a fresh yogurt sauce. Simple, delicious, and always a hit with my kids.
Instructions
Prepare the Meat

Blend the onion in a small food processor until very finely chopped.

In a large bowl, combine the ground beef and pork.

Add the onion, egg, olive oil, salt, pepper, paprika, cumin, and oregano.

Mix until everything is well combined.
Make the Sauce
- 1
Mix the Greek yogurt, green onions, and Sriracha in a small bowl.

Adjust the Sriracha to taste, or use tomato sauce for a milder version.
Cook the Tortillas

Spread a thin, even layer of meat over one side of each tortilla.

Heat a skillet over medium heat with a little beef tallow or oil.

Place the tortilla meat-side down and cook until browned and fully cooked.

Flip so the meat faces up and sprinkle with mozzarella.

Cover the skillet for 1–2 minutes, until the cheese has melted.
Finish & Serve

Spoon the yogurt sauce over the melted cheese.

Fold the tortilla in half.
- 3
Serve immediately while it's hot and crispy.

- ✓Sprouted grain tortillas are my favorite — a healthier choice and they crisp up beautifully.
- ✓A little beef tallow in the pan adds incredible flavor, but any neutral oil works.
- ✓Spread the meat thin and even so it cooks quickly and evenly.
- ✓Best enjoyed fresh off the skillet while the tortilla is still crispy.
