Einkorn Crepes (Thin Bulgarian Pancakes)

Einkorn Crepes (Thin Bulgarian Pancakes)

Light, flexible, and incredibly delicious crepes made with ancient einkorn flour. A slightly healthier twist on classic crepes — just as soft and satisfying.

Instructions

    Add milk, eggs, einkorn flour, melted butter, and salt to a blender.

    Blend until completely smooth and lump-free.

  3. 3

    Heat a nonstick crepe pan or skillet over medium heat. Lightly grease if needed.

    Pour a small amount of batter into the pan and immediately swirl to form a thin, even layer.

  5. 5

    Cook until the edges lift easily and the bottom is lightly golden.

  6. 6

    Flip and cook the other side briefly. Repeat with remaining batter.
