Saffron Beef Mezzi Paccheri with Vodka Sauce

A cozy, elevated pasta dinner that's quick, rich, and family-approved. Mezzi paccheri tossed with spiced ground beef, bloomed saffron, and creamy vodka sauce.

Gently crush saffron threads, add 3 tbsp warm (not hot) water, and let bloom 10 min.

Heat olive oil in a large skillet over medium. Sauté onion 5–6 min until soft. Add garlic 30 sec.

Add ground beef. Season with salt, pepper, cumin, and paprika. Cook, breaking up, until fully browned.

Pour in bloomed saffron (liquid + threads). Add vodka sauce (and vodka if using). Simmer 5–8 min.

Meanwhile cook mezzi paccheri in salted water until al dente. Reserve ¾–1 cup pasta water and drain.

Add pasta to the skillet with ½–¾ cup pasta water. Cover and simmer 2–3 min so pasta absorbs the sauce.

Adjust consistency with more pasta water if needed. Finish with Parmesan, parsley, and a drizzle of olive oil.
