Strawberries & Cream Waffle Roll

Soft waffle sheet rolled with mascarpone cream, fresh strawberries, and chocolate.

Strawberries & Cream Waffle Roll

Soft waffle cake filled with fluffy mascarpone cream, fresh strawberries, and chopped chocolate. Made from one large waffle sheet baked in a panini or griddle-style maker, then rolled and chilled overnight for the perfect slice.

Instructions

Waffle

    Whisk flour, baking powder, baking soda, and salt in a large bowl.

    Add buttermilk, melted butter, and eggs and mix until smooth.

    Pour into a panini or griddle-style maker large enough for one big rectangular sheet.

    Cook until golden brown and fully cooked through. Cool completely.

Mascarpone Cream

    Beat mascarpone, powdered sugar, and vanilla until smooth.

    Slowly add cold heavy cream and whip until thick, fluffy, and spreadable. Do not overmix.

Assemble

    Spread the mascarpone cream evenly over the cooled waffle sheet.

    Sprinkle finely chopped strawberries evenly over the cream.

    Sprinkle chopped chocolate over the strawberries.

    Using parchment paper to help, carefully roll into a tight log.

    Wrap and refrigerate overnight.

    Optional: mix butter, cocoa, powdered sugar, and melted dark chocolate until pipeable; pipe swirls or rosettes over the chilled roll.

Toti’s Tips

  • Let the waffle cool completely before adding the filling.
  • Finely chopped strawberries make rolling easier and create cleaner slices.
  • Parchment paper helps create a tighter roll.
  • Tastes even better after chilling overnight.
  • No buttermilk? Add 1 tbsp lemon juice to 1 cup milk, let sit 5–10 minutes.
