Thick Bakery Chocolate Chip Cookie Sandwiches
Thick bakery-style cookies filled with a rich chocolate buttercream.

Soft, thick bakery-style chocolate chip cookies filled with a rich chocolate buttercream. Crispy around the edges, soft in the center, and packed with chocolate in every bite.
Instructions
Cookies

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.

Whisk together the flour, powdered milk, baking powder, baking soda, and salt.

In a separate bowl, beat the butter with both sugars until light and fluffy.

Add the eggs one at a time, then mix in the vanilla.

Gradually add the dry ingredients and mix just until combined. Fold in the chocolate.

Scoop large portions onto the baking sheets, leaving space between each cookie.

Bake 10–13 minutes, until the edges are lightly golden and the centers still soft. Cool completely before filling.
Chocolate Buttercream

Heat the heavy cream until hot, but do not let it boil.

Pour over the chopped dark chocolate, let sit 2–3 minutes, then stir until smooth.

Beat the softened butter until creamy.

Add the powdered sugar, cocoa powder, and vanilla, pour in the melted chocolate, and beat until smooth, fluffy, and pipeable.
Assemble

Pipe (or spread) a generous layer of buttercream onto the flat side of one cooled cookie.

Top with another cookie and gently press together.

Repeat with the remaining cookies.
