Tortilla Kebab Rolls
Crispy baked beef tortilla pinwheels with garlic yogurt sauce.

Crispy on the outside, juicy and flavorful inside — seasoned ground beef wrapped in soft flour tortillas, skewered, and baked over a rack for the perfect texture. Served with a creamy garlic yogurt sauce.
Instructions
Beef Filling

Combine beef, eggs, onion, parsley, olive oil, salt, pepper, paprika, cumin, and oregano.

Mix very well until fully combined and slightly sticky.
Assemble

Lay a tortilla flat. Spread a thin, even layer of beef over the entire surface.

Roll tightly into a log. Insert a wooden skewer through the center.

Slice into thick pinwheels (about 1½–2 inches). Repeat with remaining tortillas and filling.
Bake

Preheat oven to 400°F (200°C). Line a baking dish with parchment and place a wire rack on top.

Arrange the rolls on the rack — not directly on parchment — so air circulates and bottoms don't get mushy.

Bake 20–25 min, until fully cooked and golden.
Garlic Yogurt Sauce

Mix yogurt, garlic, chives, dill, oregano, salt, pepper, paprika, lemon zest, olive oil, and optional saffron.

Add lemon juice to taste. Mix until smooth and creamy.

Serve warm rolls with sauce on the side or drizzled over.
