The Crepes That Made My Kids Forget Everything Else
I didn't plan for einkorn to become a thing in our house. Then I made these crepes, and my kids asked for them again the next morning.

I didn't plan for einkorn to become a thing in our house.
I'm a mom of three with a full time job, a Bulgarian language teacher on weekends — my life is already full before I even walk into the kitchen. So when I first started experimenting with einkorn flour, I wasn't looking for a project. I was just curious about this ancient grain that my grandmother's generation would have recognized immediately, but that most people today have never even heard of.
Then I made these crepes.
My kids tried them and looked at me like I had done something magical. They didn't ask what was different. They just asked for more. And then they asked for them again the next morning. That's the moment I knew einkorn was here to stay in our kitchen.
What even is einkorn?
Einkorn is one of the oldest cultivated wheats on earth — an ancient grain that hasn't been hybridized the way modern wheat has. It has a naturally nutty, slightly sweet flavor, a beautiful golden color, and a lower gluten structure that many people find easier to digest.
Here's something that blows my mind every time I think about it: while almost every grain we eat today has been hybridized and altered, einkorn escaped all of that. It simply disappeared from modern agriculture before scientists could get to it. Modern wheat has 42 chromosomes. Einkorn? Only 14 — exactly as nature made it, 12,000 years ago. It wasn't protected in a lab. It was protected by being forgotten.
And now here it is, in my kitchen, making the softest crepes my kids have ever eaten. For me, it also feels like a connection to something real. To the way people used to eat. To Bulgarian kitchens that valued simple, wholesome ingredients. That matters to me more than I can explain.
The best part? It takes one blender.
No whisking. No sifting. No standing there hoping the lumps disappear. You just dump everything in — I use my Vitamix but any blender works — blend until smooth, and you're ready to go. That's it. Simple ingredients, no stress, and crepes that are soft, flexible, and incredibly delicious every single time.
